Applava

Ingredients

  • Filo Dough
  • Apples (6)
  • Blackberries (at least 1 cup but as many as you want)
  • Unsweetened Plant Yogurt [I use almond with vanilla in it.] (1 cup)
  • Coconut Sugar (3 tablespoons)
  • Cinnamon (2 teaspoons)
  • Plant Butter or Coconut Oil (1/4 cup)

Process

  1. Preheat oven to 400°F (200°C)
  2. Peel and cut apples in to small chunks and mix with cinnamon and 2 tablespoons of coconut sugar.
  3. Mix the remaining coconut sugar with the yogurt.
  1. Get a baking pan which will fit your Filo Dough, and melt the butter.
  2. Spread some butter on the bottom of the baking dish and then spread a few layers of dough.
  3. Layer in this order: dough, butter, yogurt, apples, blackberries until you run out of ingredients.
  1. Bake for 25 minutes.
  2. Serve with some blackberries atop.

Notes

  • I made this recipe up as a way to get rid of leftover filo dough. I call it Applava because it is reminiscent of baklava but uses, of course, apples.
  • So many other things could be added to this recipe. Nuts, other fruits, perhaps some sweet seasonings like nutmeg or cloves.
  • I use about 4-5 sheets per layer because I didn’t have very many apples. It can be modified have more apples or less dough or whatever suits the fancy.
  • It’s a quick and easy sweet treat, but the sugar could be omitted entirely. I used a very small amount mostly because I was worried the apples would dry in the oven without something to create a ‘syrup’.

-Makes 6-8 servings

-Inspired by everyone who created baklava (and a little bit of Italy with the bechamel concept, and Greek filo dough), but this is way less interesting than real baklava.
